Splenda Chocolate Chip Cookies

I’ve updated this recipe. Adding just slightly more splenda sugar blend than the original recipe calls for.


Baking Time: 9 to 11 minutes

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter
1/2 cup SPLENDA® Sugar Blend for Baking
1/2 cup SPLENDA® Brown Sugar Blend, firmly packed
1 teaspoon vanilla extract
2 large eggs
1 package(12-ounce) semi-sweet chocolate morsels

1. PREHEAT oven to 375° F.
2. COMBINE flour, baking soda, and salt in a small bowl. Set aside.
3. BEAT butter, SPLENDA® Sugar Blend for Baking, SPLENDA® Brown Sugar Blend, and vanilla extract at medium speed with an electric mixer until blended. Add eggs, one at a time, mixing well after each addition. Gradually add flour mixture, beating until blended. Stir in chocolate morsels.
4. SPOON rounded tablespoons of cookie dough onto ungreased baking sheets and press gently to slightly flatten dough.
5. BAKE 9-11 minutes or until lightly browned. Remove from oven and cool on a wire rack.

Notes: I think it nees more sweet. I think I would use 1/2 cup of he regular sugar blend next time. I also want to try this with a low fat butter substitute, like Smart Balance.

    Merry Christmas! That picture of Greta with Max in the snow is cute. It’s strange how the smooth coats hate the cold and snow and the long and wires love it!
