Stuffed Peppers and Mashed Potatoes…Does It Get Any Better?

I decided today to make something special for dinner. Hubby loves to eat, and he loves foods that are more typically found in Diners. I asked him if he might be interested in my making stuffed green peppers for dinner and his smile told me all I needed to know.

I had found a recipe a while back for a Weight Watchers version of Stuffed Peppers, and I played with the recipe and today made up a batch. Aside from using ground turkey instead of ground beef, this is pretty much the same recipe I have been making for many years.

While the peppers cooked in the oven, I peeled some Yukon Gold potatoes to mash. It all came together and at six I set Hubby’s meal before him. The sounds of his delight made me happily realize that my choice for tonight’s meal was a good one. It was delicious and I also enjoyed it.

Who says that dieting can’t be fun?

Stuffed Green Peppers serves 8
Ingredients
• 1 pound Turkey, ground, 93% lean/7% fat, raw
• 1 cup onion(s), chopped finely
• 1/2 cup sweet red pepper(s), finely chopped
• 1/2 cup cooked brown rice
• 1 Tbsp fresh oregano
• 1/4 tsp garlic clove(s)
• 1 cup shredded fat-free mozzarella cheese
• 4 large green pepper(s), cut in half and cleaned
• 2 cup canned tomato sauce
Instructions
Preheat oven to 350 degrees F. Cut pepper in half and remove seeds. Blanch peppers for 5 minutes in boiling water. Place peppers in baking dish.
Sauté turkey, garlic onions until done adding in the red pepper towards the end. Add cooked rice.
Mix tomato sauce with oregano (or Italian Seasoning) and poor half into turkey mixture. stuff pepper halves, then pour remaining sauce over peppers. Cover and bake for 45 minutes. Uncover, top each pepper with cheese and bake another 10-15 minutes until cheese is melted.
1/2 a pepper = 3 points.

    I always replace now beef with turkey or chicken, we just don’t like beef anymore only in form of a steak.

  2. Mmmm! I LOVE stuffed peppers! My hubby won’t eat a pepper though no matter what I do to it! He hates them! I haven’t had a good stuffed pepper (or even a bad one either) in 20 years! You have my mouth watering!!! I’ve never put cheese in a pepper though – that is interesting. I might have to make some just for ME one night! I wish you would have done this a couple of days ago – then I could have done it while Hubby was gone for the weekend! Were your peppers out of your garden? FRESH would be soooo divine!
