Greta News

My dear little Greta is having continued health problems. I called the Vet again today and brought her in. She is back on antibiotics and will need to be crated at night for a while.

It really hurts. I know she is 12 years old, and I know that doggies don’t live forever, but I just hate it when their health starts on that darn slippery slope. Then you know, it is just a matter of time.

I am hoping I can take such good care of her that she will live happily and healthfully for a few more years.

Fingers crossed!

Thought On A Monday Morning

I’m thinking i should have started my walking routine, a little more slowly than I did. My first day I walked Arnie one mile, and then I rested. Then I walked Anneliese a mile, and rested. Then I walked Greta a mile and now I am exhausted, and a little sore.

You see, I am 57 years old, and like it or not after having had the cervical spine injury, surgery and recovery, I have become woefully out of shape! No, really bad. I kid you not.

I remember when I was in my teens and twenties, I could go down with an injury and bounce back pretty quickly. I also never really lost muscle tone either.

I am here to report that at 57, if you don’t use it you lose it! So, this summer I am set to get my mojo back. And with it, my muscle health and personal well being.

I figure if I can confess that my office was a disaster and finally clean it up, I can confess to my being out of shape, and my determination to get myself back on track. It’s just not easy!

Lentil Soup

Here is a great recipe for Lentil Soup. I admit to never having liked Lentil Soup, but Hubby loves it, so he asked me to make it for him.

Well, I tried it after I made my first ever batch of this soup, and I am now a convert. Not for just any Lentil Soup, but for mine.

Maribeth’s Lentil Soup

20160416_130655

Ingredients:

  1. 2 Tbs Olive Oil
  2. 1 Cup Diced Onion
  3. 1/2 Cup diced carrot
  4. 1/2 Cup diced celery
  5. 1 Tsp Salt
  6. 2-1/2 Cup Dry Lentils
  7. 1-15 ounce can Diced Tomatoes
  8. 8 Cups Vegetable Broth
  9. 1/2 Tsp Cumin
  10. 1/2 Tsp Coriander
  11. 1/4 Tsp Black Pepper
  12. 1/4 Tsp Cardamom

Heat oil in a large soup pot over medium heat. Add diced onion, carrots, celery and salt. Saute until soft, about 5 minutes.

Sort and rinse the Lentils, then add them to the pot, along with the tomatoes, vegetable broth and spices. Cover and bring to a boil. Reduce heat to low and simmer until the Lentils are tender, about 35-45 minutes.

Friday Five

The week is rushing by. Here we are and it is Friday! Now here is something particularly hilarious. On Monday I was half way through the day when I thought, “Oh, I am so happy it’s Friday!”. Then I realized it was, in fact, Monday! Groan!

So here are the highlights from this past week.

  1. Greta had her health checked. This required me driving in ice and snow out to my Vet’s office. I just took my time and we made it out and back, just fine.
  2. Hubby and I did the taxes and mailed them off. I am always glad when we get that done. My least favorite time of year!
  3. Thursday found me digging out the laundry and working on catching up with all of that. I admit to being a bit remiss at throwing in a load here or there, so it was important to get at least three loads done.
  4. I made Lentil Soup today. It was the first time. I made a vegetarian Lentil Soup and it was actually not too bad. I have had Lentil Soup from cans and also in restaurants, but they always tended to have sausage and were really thick. So, I thought I did not like it. This was good.
  5. This weekend I plan to take a few walks with Greta. My plan is to walk her into shape a little, while at the same time, walk myself into better condition.

Have a great weekend everyone!

TBT: Puppies & Kitties

Here we are, so long ago, on Cape Cod. I am on the far left. Little pip squeak me. I think I was maybe 5 or 6 years old. Next to me is my sister Melodie, holding our new puppy, Baby. Next to her are our friends, Nancy and Terry. Terry is holding our Siamese cat, Smokey. My, that Smokey was the best cat ever!

This was at our home on Clipper Lane. A house I always think of as being my home. So many memories there. I will need to stop by when I am down there this summer.

Wednesday Hodgepodge

1. What’s the last thing you did that could be described as ‘taxing’?

images

Helping Hubby with our taxes! Oh I hate this time of year, when every document, every little expense must be accounted for.

2. If you could plant a garden of anything, what would be in it?

Successfully? I would plant a garden of eggplant! As it is, I do garden, and raise zucchini, summer squash, butternut squash, tomatoes, and tomatoes.

3. April 10-16 is National Library Week…will you celebrate with a visit to your nearest library? When did you last make a trip to the library? What are you reading right now? What’s one title on your want-to-read list?

I haven’t been to our library in a bit. Much of what I used to go in for can be done on line. When I drove to Mandy’s last week, I noticed their library, and I was thinking of learning when their story times are and perhaps taking Savi.

4. Share a saying or an old wives tale you heard while growing up, you believed to be true or that you paid attention to ‘just in case’?

Too many cooks, spoil the broth. I love to cook, but I tend to shoo people out of my kitchen.

5. Are you a fan of onions? Garlic? Ginger? What’s a dish you love that contains one, two or all three items listed?

Oh, I love Onions, Garlic and Ginger. But mostly, onions and garlic. I have a great recipe for a mushroom risotto that I add onions and garlic to and it is fantastic!

6. Where does nurturing end and indulging begin? What are some skills or qualities a person needs to posses in order to be viewed as mature?

My daughter is a great example. She nurtures her children in a loving and gentle manner. She is never too busy to hold them, and comfort them, and yet she also has set limits with Savi and her behavior.

I think the one thing I realized that a person needs to be mature is the ability to listen and accept another person’s views and ideas. Sadly, I am discovering during this presidential campaign season, that many, many, people do not posses this ability and instead of graciously listening, they attack and try to tear down the person expressing their views. Sadly, I have never read so many vile and hateful things written by friends, about other friends. Now there is a contradiction.

7. What leading figure in any field would you like to hear speak, and why?

If time were no matter, I would go back and listen to the teachings of Jesus Christ. Many people have interpreted his word, his teachings. Imagine how wonderful it would be to be able to listen to his words.

8. Insert your own random thought here.

Greta’s tests came back and she is doing as well as any 12 year old lady doggy. So, good news!

My computer Guru was here and he got my laptop cleaned, my smartphone organized and got Jack’s laptop cleaned and our desktop trouble shot. Our old desktop is XP, and whether we like it or not, it is now obsolete. Time for Hubby and I to shop around for a desktop for basic organization.

Happy Wednesday Everyone!

It’s All About…Having Fun!

I’ve been trying to get Hubby out more, to go exploring. So many things are really pricey to do these days, but last week during the noon news I heard of a local beer tasting, that was in our town and admission was free.

Now this is interesting, as both Hubby and I love beer, even though we don’t drink it very much any more, due to diabetes and well, it just plain makes me fat!

Anyway, Wednesday came and I got Hubby ready and off we went on a beer adventure. Fun right?

Well, we arrived and the first thing I noticed was that there was no sign pointing us to the beer tasting. I wondered how people could possibly find this event with no signage?

We walked in, went down the stairs to the ballroom, and a man met us at the entrance. We signed in, and he gave us a name tag, and then asked, “What company are you with?”.

Well, we looked at each other and wondered what he meant. But we smiled and entered the area. The first table we came to had smoked fish and shrimp and the man asked us “What company are you with?”.

We explained that we are basically neighbors to the event, and we’d heard about it on the TV. Everyone was so nice, and graciously offered us samples.

We went from tables with nuts, the beer, to more fish, to simply the best Ricotta/Asiago cheese stuffed ravioli, more beer and then I hit the mother load. Gelato!

Who knew Gelato could be so good? The worker offered me cups of banana caramel, chocolate with chunks of chocolate and my favorite coffee with chocolate swirls and chunks. I could have stayed there all day, but we moved on to more beer, bread and bacon.

Let’s just be clear here. There is nothing better than bacon. Especially when it comes right from the farm!

Well, it turns out this was an event for restaurants and caterers. It was not really a general public thing, but the people running it were so nice and welcomed us with open arms. We spent about two hours tasting and talking and having a great time.

I felt a little bit like Forest Gump.

In the end, I think we can both say, it was a blast!

Happy #28

Today is our 28th wedding anniversary. Through good or bad or thick or thin, we have somehow managed to make it. Quite honestly, he is still the first person I want to speak with in the morning and the last person I want to talk to before I go to bed at night. He is my husband, my best friend, my family.

So Happy Anniversary, Hubby! Here is to the first 28! Let’s hope we have many, many, more! I love you!
