I’m Dreaming….

I’ve been thinking about what I will be serving for our Christmas dinner. I’ve been making an Herb Crusted Roast Prime Rib of Beef for a couple of years and it is hard to go wrong with the recipe I have. So I am thinking that this will be the centerpiece for the meal.

I’ll also be making broiled salmon, baked stuffed potatoes, mashed butternut squash and green beans. Mandy is bringing her delicious apple bread, and for dessert I’m making Hubby his apple pie ala mode!

I’m unsure what I’ll be serving for appetizers. Any suggestions out there?

What will you all be cooking for Christmas Day? What is your favorite Christmas meal? Your favorite dessert? What foods make you think or feel the Christmas spirit?

  1. Wow—that’s a great menu!!! You must share your Prime Rib recipe!!! I’d love to try it out for my family (I don’t eat meat, other than chicken-weird I know).

    One of our newest favorite appetizers:
    Whipped Cream Cheese
    Chives
    Green Onions
    Bacon bits (for the carnivores in the family)

    Mix all together and enjoy with celery, mini carrots, cucumbers.
    Yummy!!

    And sweet potatoe pie is the best dessert.
    But homemade sugar cookies with homemade frosting and sprinkles will ALWAYS remind me of the holidays, and of the days when my son was little and making these would be a week long process and would benefit nearly everyone we knew.

  2. We’ve spent the last 15 Xmas in the mountains. Our traditional Xmas meal is…cheese fondue! with baked potatoes and tossed salad.
    Your planned meal sounds delicious!

  3. Yummy! It all sounds so delicious. We’ll be having Swiss raclette in Christmas Eve, as usual, and then a turkey dinner on the 25th with trifle and plum pudding for dessert.

    Well, for Christmas Eve, I always think Chinese–a holdover from all of those Christmas Eve dinners at the Kahala….

    Christmas–I always think of mashed potatos and turkey…. But salmon and baked potatos sound fabulous as well! I know M will love the meat dish! If you ask him, he probably doesn’t get enough of those! (LOL).

    Only 3 working days left, and then I am officially on my vaca!

    Be sure to get back to me with a good holiday idea for hubby!

  6. My favorite is ANYTHING but turkey! I prefer to do seafood – but this year we are going to do steaks on the grill. Baked potatoes and probably broiled asparagus. I don’t think I’m doing a lot other than that. I plan a Happy Birthday Baby Jesus cake for Luz’s benefit… and probably another dessert – maybe a cheesecake. I dunno. I really prefer the meal not to be a big deal.

  7. We are having a three bird roast – a boned goose, stuffed with a boned chicken, stuffed with a boned pheasant with layers of spiced orange and pork stuffing inbetween. It looks like a giant meaty cushion and you carve it by cutting it in slices. Yumm. (I love goose but hate roasting a whole one – so much fat to cope with!)

  8. This year, Christmas is at Lou mum & dads, so I will not be cooking anything (except for fried eggs and ham at home on Chrissie morn)!

    But, as a side dish that is always popular in our house, and I find it really easy to do, is some Asian Greens… Grate some fresh ginger (or the pre-made minced is fine…) and combine with some Soy Sauce and set aside. Lightly blanch some greens, Beans is good, cut Broccoli into small sections is also good… about 3-4 mins is enough! Set aside for a couple of mins… Whilst that is happening, bring 4 parts Peanut oil to 1 part Sesame Oil (tbl spoons I use) to heat and toss through your greens. After a minute or two, combine the Ginger/Soy mix through for about a minute and plate up and serve!

    Oh, by the way, if I was to get a flight across, can I come for dinner as it sounds YUMM!!! lol lol

  9. Oh, and another one for you… A SWEET one this time!

    I get a carton of sour cream, about 300ml…
    Put in a nip (or two) of Tia Maria! Yes, that’s right, Tia. This can be done to taste as well… Put this into the fridge to re-set.

    Cut fruit of choice into bite size chunks. Apples, Strawberries, Pineapples are all good, but put in what ever you have at hand…

    When presenting, have the ‘DIP’ in a bowl in the middle of a large platter surrounded by the fruit. Select your piece of fruit, dip and enjoy! Great to have as a side dessert, or in place (or accompanied) to a cheese platter after a meal…!
